350g White or wholemeal flour
Steam potato don't boil
Add gradually flour don't over mix , turn onto a well floured table / board kneed for 3-5 mins approx ...
Shape down to 2 cm approx & cut length ways ,middle finger size , then roll gentle into a long sauage , cut to size 2.5cms , place onto flouered tray & freeze untill hard.
Pot of boiling water add a little salt , drop one portion of froozen gnocchi into boiling water , when it floats, allow 1 min & add to flavorite sauce...
